Bolthouse Bites

I am a creamy salad dressing gal.  Don’t get me wrong, I like a yummy vinaigrette, but usually, given the choice, I will pick a good bleu cheese, chipotle ranch or honey mustard. Not the best option, I know. Lucky for me, a while back, a friend told me about Bolthouse Farms Yogurt Dressings, and I have bought them almost exclusively since then.


Simply put, they are delicious. Coming in at 35-40 calories for a 2 Tbsp. serving, they are much better for you than most creamy dressings. They contain no preservatives, artificial flavors, high fructose corn syrup or gluten, and are low fat too.  Having become addicted to these delicious and guilt-free dressings, I was delighted to meet  the lovely people from Bolthouse when I was at the PMA Fresh Summit last month!


I got to see not only the wonderful new products that have recently come out, but the additional products that are on the way after the first of the year! Hint for all of you who are already fans of these dressings…two new dressings are in the picture above…


…hard to imagine that they could top the Mango Chipotle and Cilantro Avocado dressings, but they just might have done it!


Among their newer products are four Greek Yogurt Dressings – like their counterparts, they have no preservatives, artificial flavors, gluten or high fructose corn syrup, and are low calorie – but they start with a non-fat Greek Yogurt base, which makes them extra thick and creamy…yum.


After I raved about how much I love the yogurt dressings, a goodie box arrived in the mail for me with a bottle of each flavor to try (along with some smoothies and their low fat Holiday Nog – which we’ll be talking about in an upcoming post!). I immediately began to think of how I could use the dressings in a fun and creative way.

I mean, there’s no doubt they’d make any salad fantastic (and they do).  I wanted to come up with something that would be great for the holidays – easy and quick, delicious, and a healthier option for entertaining – so we can also enjoy the other delectables of the season…like Christmas cookies, perhaps…

Then I thought of how my daughter and I have made appetizers using those cool pre-baked Phyllo Pastry mini-cups, filling them with chicken salad, or brie and fruit…and that’s how I came up with my Bolthouse Bites!

These are super easy and can be made with things you probably already have in your fridge, especially during the holiday season, when we tend to be more stocked up on foods in preparation for planned and spur-of-the-moment guests.

Buffalo Chicken Bites


You can use leftover meats or purchase prepared products.  You can vary the cheeses and vegetables, and use different herbs and sauces to mix in with the dressings. If you can’t find the Phyllo Pastry, Tostitos Scoops  make a great substitute.

You can heat the appetizers or serve them cold.  And you can try the myriad of Bolthouse Yogurt Dressing flavors with your choice of fillings.  The Greek Yogurt Dressings are really thick and creamy, which makes them ideal for these appetizers, but the other dressings would be great too; just start with a small amount and add more slowly so the fillings won’t be too thin.

These appetizers make a beautiful presentation – no one will guess how easy they are!

Delicious, healthier-option appetizers that are quick and simple to make and easily varied with different ingredients.
Recipe type: Appetizer
Serves: 12-15
  • For Buffalo Chicken Bites:
  • 1½ cups chopped cooked chicken
  • ⅓ cup finely diced celery
  • 2 Tbsp. chopped chives/finely chopped green onions
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup Bolthouse Farms Peppercorn Ranch Greek Yogurt Dressing
  • 2 Tbsp. Texas Pete's Fiery Sweet Wing Sauce (or more for spicier flavor)
  • Kosher salt & freshly ground black pepper
  • For Salmon Deviled Egg Bites:
  • 1 6-7 oz. cooked salmon filet, shredded (makes about 1 cup)
  • 1 shallot, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1 Tbsp. fresh dill, minced
  • 1 Tbsp. capers, chopped (optional)
  • ⅓ cup feta cheese
  • ¼ cup Bolthouse Farms Cucumber Dill Greek Yogurt Dressing
  • freshly ground black pepper
  • For Turkey Caprese Bites:
  • 1½ cups chopped cooked turkey
  • 2 Tbsp. julienned fresh basil
  • ¼ cup toasted pine nuts
  • ½ cup shredded mozzarella cheese
  • ¼ cup Bolthouse Farms Creamy Basil Greek Yogurt Dressing
  • 2 Tbsp. sun-dried tomato pesto
  • Kosher salt & freshly ground black pepper
  • For Beef n' Bleu Bites:
  • 1½ cups diced roast beef
  • ½ cup bleu cheese
  • 2 Tbsp. chopped fresh chives
  • 1 tsp. minced fresh rosemary
  • ¼ cup Bolthouse Farms Bold Bleu Cheese Greek Yogurt Dressing
  • 2 Tbsp. prepared horseradish (or more if you'd like it hotter)
  • Kosher salt & freshly ground black pepper
  • Phyllo Pastry Shells and/or Tostitos Scoops
  1. For each mixture, place all ingredients except for dressing and sauce/pesto/horseradish in a large bowl and mix to combine.
  2. In a smaller bowl or measuring glass, mix the dressing and sauce/pesto/horseradish.
  3. Pour the dressing mixture over the meat mixture and mix gently to combine.
  4. Season as needed with the Kosher salt and black pepper. (Taste first as the cheeses and capers can be salty already; you may not need much or any salt at all.)
  5. Store in refrigerator until ready to fill the Phyllo shells or scoops.
  6. Fill shells just prior to serving.
  7. To serve warm, follow the package directions for heating Phyllo shells, or for scoops, preheat oven to 350F.
  8. Place scoops into a baking sheet and fill with desired amount of filling.
  9. Bake for 5-8 minutes, until heated through.
These mixtures are very versatile. Change the meats, cheeses, sauce mix-ins and herbs as you like. Use more or less of the spicy stuff as it suits your taste (or your guests').

You can even put a scoop or two of these mixtures over fresh greens for a nice salad.
